Naomi’s Favorite Thanksgiving Recipe

Brussel Sprouts Fanatic

One of my favorite fall vegetables is Brussels sprouts. I always look forward to them on my Thanksgiving plate year after year—even more than pumpkin pie! I knew I had to pay homage to my beloved mini cabbage for the final month of fall.

This Fall Harvest Salad has all the hallmarks of fall: kale, Brussels sprouts, apples, pecans, and pomegranate seeds. A maple dijon vinaigrette, a classic combination accompanies it. It works well as a side dish, appetizer, and even on its own as a filling lunch! What I appreciate about Gal’s recipe is the versatility in it. I opt for shaved parmesan in place of the feta and switch the maple syrup for honey as a less expensive (but still delicious!) alternative. Add sweet potato or cranberries, pumpkin seeds, or pears, the possibilities are endless.
